Vegetarian Fritters / Iroog

 

Ingredients:

  • Cauliflower (1 Whole)
  • Onions (3 Medium)
  • Parsley (1 Bunch)
  • Mushrooms (1 Bunch, Medium Container or 2 cups of whole mushrooms) (White button or Crimino Mushrooms)
  • Jalapeno (1 Large)
  • Tomatoes (3 Medium)
  • Fine Cracked Wheat / Gerish (2 Cups)
  • Cream of Wheat (1 Cup)
  • Tomato Paste  (1 TBSP)
  • Baking Powder (1TBSP)
  • Salt (1 TBSP)
  • Black Pepper (1/2 TBSP)
  • Allspice (1 TBSP)
  • Turmeric (1/4 TSP)
  • Curry Powder (1 TSP)
  • Vegetable Oil (1 Cup)
  • Cilantro (For Garnish)

Directions:

  1. Prepare a large and deep bowl that you will add all of the vegetables.
  2. Soak all of the vegetables with water and white vinegar for about 5 minutes then rinse and damp dry with a towel.
  3. With an electric vegetable chopper, add one cauliflower. Throw in small pieces for best results. May repeat process if it’s a small machine. Once its chopped fine, pour it into the bowl.
  4. Cut up 3 onions and add to the chopper. When they are chopped fine, place them onto a paper towel and squeeze out excess juice. Then add them to the bowl.
  5. Add one bunch of parsley to the chopper and then add it to the bowl.
  6. Add about 2 cups of whole mushrooms into the chopper and run the machine. Then add to the bowl.
  7. Chop one large jalapeño and add it to the bowl.
  8. Chop 3 medium tomatoes and add them to the bowl.
  9. Add 2 cups of fine cracked wheat to the bowl.
  10. Add 1 cup of cream of wheat to the bowl.
  11. Add 1 TBSP of tomato paste to the bowl.
  12. Add 1 TBSP of baking powder to the bowl.
  13. Add 1 TBSP of Salt to the bowl.
  14. Add 1/2 TBSP of black pepper to the bowl.
  15. Add 1 TBSP of all spice to the bowl.
  16. Add 1/4 TSP of turmeric to the bowl.
  17. Add 1 TSP of curry powder to the bowl.
  18. Combine everything by hand.
  19. Make into patties by hand.
  20. In a medium size deep frying skillet, add 1/4 cup of oil at a time. Fry about 4 each time. 3 to 5 minutes each side depending on the size of the patty. Medium to hight heat.
  21. Place finished fritters onto a paper towel. Then place them onto a plate.
  22. Garnish fritters with cilantro.

*** Tip *** If there are leftovers, you can freeze them. This makes about 20 vegetarian fritters.
