Traditional Lentil Soup
Ingredients:
- Vegetable Oil (One TBSP)
- Rice Noodles (1/4 Cup)
- Onions (1/4 Cup)
- Fresh Garlic (2 Cloves)
- Salt (1/4 TSP)
- Ground Cumin (1/4 TSP)
- Spicy Curry Powder (1/2 TSP)
- Turmeric (1/4 TSP)
- Water or Vegetable Stock (10 Cups)
- Red Lentils (2 Cups)
- Fresh Lemon Juice (2 TBSP)
- Parsley (For Garnish)
Directions:
- In a large (10 quart) sauce dish, add 2 tablespoons of olive oil and set heat on high.
- Add 1/4 cup of shredded rice noodles and stir with a wooden spoon on medium heat.
- Before noodles turn color, add salt, cumin, curry powder, turmeric and stir until noodles brown.
- As soon as you see some color to the noodles, add the water or vegetable stock, 10 cups.
- When water boils, add 2 cups of red lentils and set heat to medium/low. Let them cook for about 35 minutes.
- When lentil soup is done cooking, add lemon juice and turn heat off.
- Garnish with parsley.
