Sweet and Sour Fish
Ingredients:
- White Fish Fillet (3)
- Onion (1)
- Red and Yellow Bell Peppers (1 Each)
- Garlic (2 Cloves)
- Cherry Tomatoes (1 Cup)
- Bay Leaves (2)
- Hot Curry Powder (1.5 TSP)
- Sugar (2.5 TSP)
- Cider Vinegar (5TSP)
- Salt and Black Pepper (1/2 TSP Each)
- Parsley (1/2 Cup For Garnish)
- Olive Oil (2 TBSP)
Directions:
- In a deep non stick skillet, add two tablespoons of olive oil and set the heat on high.
- Roughly slice one onion into half moons and add to the oil. Set the heat on medium and sauté.
- Cut one red and one yellow bell pepper into Julienne cut (Long and thin strips) and add to the skillet.
- Dice two cloves of garlic and add to the skillet.
- Chop one cup of cherry tomatoes and add to the skillet.
- Add two bay leaves.
- Mix everything and let it sauté for about 3-5 minutes on medium heat.
- Add a teaspoon and a half of hot curry powder and combine everything.
- Add two and a half teaspoons of fine sugar.
- Add five teaspoons of cider vinegar.
- Add salt and pepper, 1/2 teaspoon each or to taste.
- Add the white fish fillet pieces and cover. Set the whole skillet in the oven 350º for 30 minutes.
- When you take it out of the oven, garnish with chopped parsley.
