Scallops and Shrimp Pasta

 

Ingredients:

  • Scallops (6 small/medium sized)
  • Baby Shrimp (Handful)
  • Minced Garlic (2 Cloves)
  • Fresh Oregano (1 TBS)
  • Scallions (2 TBS)
  • Mushrooms (1 Cup)
  • Roasted Tomatoes in a Can or Jar (1 Cup)
  • White Cooking Wine (1 Cup)
  • Heavy Cream (1 Cup)
  • Angel Hair Pasta
  • Olive Oil

Directions:

  1. In a large and deep non stick saucepan, add one tablespoon of olive oil.
  2. Then add the scallops and cook them for two minutes on each side. Then remove them and set them on a plate.
  3. In the same saucepan, add a teaspoon of olive oil and then add the baby shrimp and cook that for another couple of minutes as well. Take that out when it’s done and set it with the scallops.
  4. In the same saucepan, add two cloves of minced garlic.
  5. Chop one tablespoon of fresh oregano and add that with the garlic.
  6. Chop some scallions and add them as well.
  7. Chop one cup of white mushrooms and add them to the saucepan.
  8. Let everything sauté for a couple of minutes then add one cup of fire roasted tomatoes.
  9. To that, add one cup of white cooking wine.
  10. Add one cup of heavy cream.
  11. Add salt and pepper to taste.
  12. Let everything simmer for about five minutes.
  13. Cook angel hair pasta and then add it to the dish. Combine everything. Garnish the finished dish with scallions.
