Sausage and Zucchini Casserole
Ingredients:
- Minced Italian sausage (1 Pound)
- Zucchini (1)
- Cherry Tomatoes (1/2 Cup)
- Salt and Pepper (1/2 Teaspoon Each)
- Shell Pasta
- Shredded Cheese (Gruyere and Cheddar) (1 Cup Each)
- Parsley (For Garnish)
Directions:
- In a non stick skillet, cook the minced sausage on medium heat for about 5-7 minutes or until it becomes crumbly.
- Shred one large zucchini and add to the sausage.
- Chop cherry tomatoes in half and add to the sausage mix. Cook everything together for another 3 minutes.
- Cook shell pasta for about 12 minutes or until al dente.
- Combine the pasta and the sausage mix in a deep casserole/lasagna baking dish.
- Shred the cheese and add to the baking dish.
- Set the casserole in the oven 350º for 20 minutes.
- Take it out of the oven and garnish with fresh chopped parsley.
