Prime Rib
Ingredients:
- Prime Rib (7 Pounds)
- Olive Oil (1 Cup)
- Salt (1/2 Cup)
- Black Pepper (2 Tablespoons)
- Dry Mint (2 Tablespoons)
- Dry Thyme Leaves (1 Tablespoon)
- Dry Rosemary Leaves (1 Tablespoon)
- Whole Garlic (1)
- Bay Leaves (8-10)
Directions:
- Damp dry the prime rib with a paper towel.
- Pour 1 cup of cooking olive oil onto the prime rib.
- Add 1/2 cup of salt.
- Add 2 tablespoons of black pepper.
- Add 2 tablespoons of dry mint.
- Add 1 tablespoon of dry thyme.
- Add 1 tablespoon of dry rosemary leaves.
- Work everything into the prime rib with your hands. Rub all over so that all sides are well incorporated.
- Poke the prime rib with a knife deep enough so that you can insert garlic cloves.
- Open a whole clove of garlic and insert them into the holes.
- Throw about 8-10 bay leaves onto the prime rib.
- Cook the prime rib uncovered on 500º for 30 minutes then 350º the remainder of the time.
- Baste every 30 minutes for juiciness.
- It should take about 15-17 minutes per pound. Or until thermometer reads 130º (for medium rare). When you remove it from the oven, let it rest for at least 7-10 minutes before slicing.
