Pomegranate Salmon
Ingredients:
- Salmon
- Honey or brown sugar (1/4 Cup)
- Pomegranate Juice (1 Cup)
- Pomegranate Molasses (3 Tablespoons)
- Whole Grain Mustard (1 Tablespoon)
- Pomegranate (Fresh for Garnishing)
- Carrots
- Salt and Pepper
- Olive Oil
Directions:
- In a small skillet, whisk together honey (or brown sugar), pomegranate juice, pomegranate molasses and whole grain mustard. Simmer on low for 15 minutes.
- Cut up the salmon in uniform size. Sprinkle salt and pepper on both sides.
- Spray the pan with olive oil or pam spray and add the salmon
- Brush the glaze over the salmon and put in the oven 350º for 20-30 minutes.
- Shave carrots and clean them.
- Sprinkle salt and pepper on the carrots. Roast in oven 425º for 15-20 minutes.
- When both the salmon and carrots are cooked, garnish with fresh pomegranate.
