Mediterranean Style Yellow Rice/Beef

 

Ingredients:

  • Ground Beef (1.5 Pounds)
  • Onion (1 Small)
  • Basmati Rice (2 Cups)
  • Pine Nuts (1 Cup)
  • Golden Raisins (1 Cup)
  • Vegetable Oil (1 TBSP for ground beef and 1 TBSP for Rice) (1 TSP for Pine Nuts and 1 TSP for Golden Raisins)
  • Salt (1/2 TSP for ground beef and 1/2 TSP for Rice)
  • Black Pepper (1/4 TSP)
  • All Spice (1/2 TSP)
  • Saffron (1/4 TSP)
  • Water (2 Cups)
  • Parsley (For Garnish) 

Directions:

  1. In a medium Sauté Pan, put a pound and a half of ground beef. Set the heat on high.
  2. For moist ground beef, add a quarter cup of water and cover the pan on medium/high for about 15 minutes or until the water dissolves. 
  3. When the water has dissolved add one tablespoon of vegetable oil. 
  4. Chop one small onion fine and add it to the ground beef. 
  5. Sauté for another 5 minutes on low/medium heat.
  6. Then add 1/2 teaspoon of salt, add 1/4 teaspoon of black pepper and 1/2 teaspoon of all spice to the ground beef and mix together. Cook for another 5 minutes on low heat. When finished, set it to the side.
  7. Wash 2 cups of basmati rice in cold water and rinse.
  8. In a medium saucepan, set on high heat, add 1 tablespoon of vegetable oil. Then add 2 cups of water to it. Then add 1/2 teaspoon of salt. Finally add 1/4 teaspoon of saffron to the saucepan.
  9. When the water comes to a boil, add the rice to it and set the heat to medium/low.
  10. When the rice is cooked, set it to the side.
  11. In a small Sauté pan, set heat to high/medium. Add 1 teaspoon of vegetable oil, then add 1 cup of pine nuts. Stir frequently. This should take about only 4 minutes or until golden brown. When you see they are golden brown, you can remove from heat and set aside. ***TIP*** If you do not like to use oil you can omit that part.
  12. In a small Sauté pan, set heat to high/medium. Add 1 teaspoon of vegetable oil, then add 1 cup of golden raisins. Stir frequently. This should take about only 4 minutes or until golden brown. When you see they are golden brown, you can remove from heat and set aside. ***TIP*** If you do not like to use oil you can omit that part.
  13. When everything has cooked, assemble on a dish. First pour yellow rice, then ground beef, then pine nuts and golden raisins. You can garnish with parsley.
