Jack-O-Lantern Stuffed Peppers
Ingredients:
- Orange Bell Peppers (6)
- Small paring knife
- Ground Beef (1 Pound)
- Onion (1/4 Cup)
- Garlic (1 Clove)
- Parsley (1/4 Cup)
- Pine Nuts (1/4 Cup)
- Salt (1/4 Teaspoon for beef) (1/2 Teaspoon for rice)
- All Spice (1/4 Teaspoon)
- Tomato Sauce (1/2 cup for beef and 1 cup for red rice)
- Rice (1 Cup of Basmati Rice)
- Vegetable Oil (1 Tablespoon)
- Water (1 Cup)
Directions:
- In a non stick pan, cook one pound of ground beef on high heat. Do not add water, as it gives it out during the cooking process.
- When the water dissolves from the ground beef, add one tablespoon of vegetable oil (preference).
- Turn the temperature to medium and add a fourth cup of chopped onion to the ground beef.
- To that, add a clove of diced garlic to the mix.
- Chop a fourth cup of fresh parsley and add it to the mix.
- Add a fourth cup of pine nuts.
- Add 1/4 teaspoon of salt and allspice (each).
- Add 1/2 cup of tomato sauce to the mix and combine everything with a wooden spoon.
- Turn off the temperature and set the beef mix to the side.
- To cook red rice you need a medium sized saucepan with a good fitting lid.
- Set the heat on high and add one tablespoon of vegetable oil to the saucepan.
- Add one cup of tomato sauce to that.
- Add one cup of water.
- Add 1/4 teaspoon of salt.
- As soon as the water boils, add one cup of rice and set the heat on medium/low.
- Let the rice cook with the lid on for about 10-12 minutes.
- When the rice has cooked, add it to the ground beef mix and combine them.
- While everything is being cooked, you can work on the bell peppers. To carve the shapes, it is best to work with a small paring knife. You can make triangular shapes for eyes and nose. Be creative and have fun with it. There is no right or wrong with the shapes.
- When you have created all of the shapes, add the mix to the bell peppers. Repeat the process to all of them.
