Creamy Chicken Pasta
Ingredients:
- Chicken Breast (4 Pieces)
- Garlic (2 Cloves)
- Shallots (2)
- Cherry Tomatoes (1/2 Cup)
- White Mushrooms (1 Cup)
- Chicken Broth (1 Cup)
- Heavy Cream (1/4 Cup)
- Red Pepper Flakes (1/4 TSP)
- Salt and Pepper (To Taste)
- Chopped Parsley (For Garnish)
- Lemon Juice (1 TBSP)
- Olive Oil
- Angel Hair Pasta
Directions:
- Take 4 pieces of chicken breast, cover them with saran wrap and use a meat mallet to pound the chicken into about 1/4 inch in thickness. Or you can buy two pieces and cut them to make 4 pieces of chicken.
- Once you’ve pounded them, sprinkle salt and pepper on each side of the chicken.
- In a deep non stick skillet, set the heat on high and add one tablespoon of olive oil, then add the 4 pieces of chicken and set the heat on medium. Let them cook for about 4-5 minutes each side.
- Then remove the chicken and set it on a plate.
- Mince two cloves of garlic and add them to the skillet.
- Dice two shallots and add them to the skillet.
- Chop cherry tomatoes in half and add them to the skillet.
- Trim thin slices of mushrooms and add them to the skillet, about a cup.
- Sauté everything for a couple of minutes then add one cup of chicken broth.
- Add a 1/4 cup of heavy cream.
- Bring the chicken back to the skillet.
- Add 1/4 teaspoon of red pepper flakes.
- Cook the chicken for another 5 minutes covered.
- Garnish the dish with chopped parsley.
- Add one tablespoon of lemon juice to the dish.
- Serve the chicken dish with cooked angel hair pasta.
