Bruschetta

Ingredients:

  • Cherry Tomatos (1 Cup)
  • Toasted Pinenuts (1/2 Cup)
  • Fresh Basil (1/2 Cup)
  • Shallots (2)
  • Garlic (2 Cloves)
  • Red Wine Vinaigrette (2 TBS)
  • Salt and Black Pepper (1/4 TSP Each)
  • Feta Cheese (6 OZ)
  • Cream Cheese (2 OZ)
  • Pita Bread (3)
  • Olive Oil

Directions:

  1. Wash one cup of cherry tomatoes in cold water and damp dry with a paper towel. Then cut them into quarters and add them to a deep bowl.
  2. Add half cup of raw pine nuts to the bowl. If you like to toast the pine nuts, do so with one teaspoon of olive oil on a nonstick skillet for a couple of minutes.
  3. Roughly chop 1/2 cup of fresh basil and add it to the bowl.
  4. Take two shallots and dice them small and add them to the bowl.
  5. Mince two cloves of garlic and add them to the bowl.
  6. Add two tablespoons of red wine vinaigrette to the bowl.
  7. Add salt and pepper to taste. Then mix everything together. Set the bowl to the side.
  8. In a different medium sized bowl, add 6 ounces of feta and 2 ounces of cream cheese and mix them together.
  9. Take 3 pita breads and cut them into triangular shapes with a pizza cutter then polish them with olive oil on both sides and set them in the oven 375º for 5 minutes.
  10. When the pita cools off, spread a generous amount of the cream cheese and feta mix with a spoon then add the tomato mix on top. Do this for all.
