Bruschetta
Ingredients:
- Cherry Tomatos (1 Cup)
- Toasted Pinenuts (1/2 Cup)
- Fresh Basil (1/2 Cup)
- Shallots (2)
- Garlic (2 Cloves)
- Red Wine Vinaigrette (2 TBS)
- Salt and Black Pepper (1/4 TSP Each)
- Feta Cheese (6 OZ)
- Cream Cheese (2 OZ)
- Pita Bread (3)
- Olive Oil
Directions:
- Wash one cup of cherry tomatoes in cold water and damp dry with a paper towel. Then cut them into quarters and add them to a deep bowl.
- Add half cup of raw pine nuts to the bowl. If you like to toast the pine nuts, do so with one teaspoon of olive oil on a nonstick skillet for a couple of minutes.
- Roughly chop 1/2 cup of fresh basil and add it to the bowl.
- Take two shallots and dice them small and add them to the bowl.
- Mince two cloves of garlic and add them to the bowl.
- Add two tablespoons of red wine vinaigrette to the bowl.
- Add salt and pepper to taste. Then mix everything together. Set the bowl to the side.
- In a different medium sized bowl, add 6 ounces of feta and 2 ounces of cream cheese and mix them together.
- Take 3 pita breads and cut them into triangular shapes with a pizza cutter then polish them with olive oil on both sides and set them in the oven 375º for 5 minutes.
- When the pita cools off, spread a generous amount of the cream cheese and feta mix with a spoon then add the tomato mix on top. Do this for all.
