Fish Curry with caramelized onions
Ingredients:
- White or catfish fillet, two
- Olive oil, three tablespoons
- Onion, one large (cut thin in half rings)
- Garlic, two cloves (cut fine)
- Parsley, one bunch (de-stem and chop)
- Salt
- Pepper
- Curry spice, 1 teaspoon
- Vegetable stock, two cups
- tomato paste, 1 tablespoons
- Lemon juice, 2 tablespoons
Directions for fish/sauce:
1. Sprinkle 1/4 teaspoon of salt and pepper on each side of the fish. Then add the freshly squeezed lemon juice (one tablespoon). Bake for 15 minutes at 350º covered.
2. While the fish is cooking, prepare the sauce. Saute’ onions and garlic in a skillet with two tablespoons of vegetable oil on medium to low heat.
3. As the onions change slightly golden, add the parsley. Add 1/2 teaspoons of salt, and one teaspoon of curry spice. Depending on how spicy you like your food. I would say, add a teaspoon and a half if you want it to be very spicy.
4. When you see the onions and garlic come to a simmer, add one tablespoon of tomato paste. Put the temperature on low and add the vegetable stock. Let simmer for about 5 minutes.
5. Add one table spoon of lemon juice and turn off.
6. Add the sauce mixture to the fish and put it back into the oven for another 15 minutes at 350*
Directions for the rice:
1. I used Uncle Ben’s rice which requires two and a half cups of water or broth for each cup of rice.
2. Add one tablespoon of olive oil and five cups of water. Bring to a boil.
3. Add 1/2 teaspoons of salt.
4. Then add two cups of Unlcle Ben rice. Bring the heat to a medium/low. let it cook for about 15-20 minutes. When rice is cooked, combine it with the fish.
