Shrimp W/Red Rice & Veggies

Ingredients:

  • Basmati Rice (3 Cups)
  • Tomato Sauce (15 oz Can)
  • Vegetable Oil (1/4 Cup of Oil for Rice and 1/4 Cup Oil for Sauce)
  • Onion (1 Medium)
  • Red Bell Pepper (1)
  • White Button Mushrooms (1 Bunch)
  • Jalapeno (1 Medium)
  • Garlic (3 Cloves)
  • Salt (1 TSP For Rice and 1 TSP for Sauce or To Taste)
  • Black Pepper (1/2 TSP)
  • Red Pepper Flakes (1/4 TSP)
  • Cajun Seasoning (1/4 TSP)
  • Crushed Tomatoes (15 oz Can)
  • Baby Shrimp (2 Cups)
  • Water (3 Cups for Rice and 1 Cup for Sauce)
  • Lemon Juice (3 TBSP)
  • Basil For Garnish

Directions:

  1. Wash 3 cups of basmati rice with cold water.
  2. Set the oven on 350º
  3. In a deep saucepan, Set heat on medium and add 1/4 cup of vegetable oil. 
  4. Then add 3 cups of water to that and set heat on high.
  5. Add 1 teaspoon of salt.
  6. When water boils, add 3 cups of rice.
  7. Add 15 oz of tomato sauce. Combine with spoon.
  8. Cover the rice well with aluminum foil and set it in the oven. 350º for 45 minutes to an hour or until rice is cooked and water has dissolved.
  9. In another medium saucepan, set heat on high and pour 1/4 cup of vegetable oil.
  10. Add one cup of chopped onions.
  11. Add 1 cup of chopped red bell peppers.
  12. Add 1 cup of chopped white button mushrooms.
  13. Sauté everything for about 5-7 minutes.
  14. Then add 1 diced jalapeño.
  15. Add 3 diced cloves of garlic.
  16. Add salt and black pepper to taste.
  17. Add 1/4 teaspoon of red pepper flakes.
  18. Add 1/4 teaspoon of cajun seasoning.
  19. Add one 15 oz can of crushed tomatoes. 
  20. Add baby shrimp.
  21. Add one cup of water.
  22. Combine everything and let it simmer for about 3-5 minutes.
  23. Squeeze half of a lemon, about 3 tablespoons. 
  24. Now that both dishes are cooked, combine the rice with the shrimp sauce and garnish with basil.
