Grilled Scallops

Ingredients:

  • Scallops (1 LB)
  • Sliced Scallions (1/4 Cup)
  • Chopped Parsley (1/4 Cup)
  • Fresh Lemon Juice (2 TBS)
  • Minced Fresh Ginger (TBS)
  • Coarse – Grained Mustard (1 TBS)
  • Olive Oil (1/3 Cup)
  • Salt and Black Pepper (To Taste)
  • Cherry tomatoes (3/4 Cup)
  • Purple Onion (1)

Directions:
1. In a deep medium bowl, toss the scallops in.

2. Add all of the ingredients: scallions, parsley, lemon juice, fresh ginger, coarse-grained mustard, olive oil, salt and black pepper. Or your can combine all of the ingredients, then whisk them, then add the scallops.

3. Refrigerate for at least one hour.

4. When you are ready to grill them, take them out of the fridge and bring them to room temperature.

5. While the grill heats, soak some skewers.

6. Thread cherry tomatoes and purple onion on each stick. Grill for a couple of minutes each side.

7. Grill the scallops 2 minutes each side. Or you can sauté.

8. When they are cooked, garnish with parsley.
