Potato Chop / Stuffed Potatoes
Ingredients:
- Minced Beef (2 Pounds)
- Onion (1 large, Diced)
- Parsley (1 bunch, Chopped)
- Potatoes (5 large Idaho potatoes)
- Salt (1 Teaspoon)
- Pepper (1/2 Teaspoon)
- Allspice (1 Teaspoon)
- Egg (1)
- Corn Starch (1/4 Cup)
Directions:
- In a large non stick skillet, cook the minced beef on high until water dissolves.
- When the water has dissolved, add a tablespoon of vegetable oil then add the onions and parsley. Cook for about 3-5 minutes on medium heat.
- Add salt, pepper, allspice. Cook for another two minutes then turn it off.
- Place it in the fridge or on the side to cool off.
- Peel about 5 large potatoes and boil for about 20 minutes in one tablespoon of salt.
- Take the potatoes out of the water and mash them with a potato masher. Let them cool.
- When the potatoes have cooled, add the egg and corn starch.
- Mix and kneed the potatoes.
- Depending on the size you like the potato chop / stuffed potato, make a few round shaped balls.
- Take one ball, poke the center and make an opening, then stuff it with one tablespoon of meat mix.
- Close it up, forming a patty like shape and add more potatoes as needed.
- When you have made all of them, fry them.
- In a non stick deep pan, add about a cup of vegetable oil and set the heat on high.
- Set 3-4 at a time in the oil and bring the heat to medium.
- Fry for about 3-5 minutes.
