Turmeric Barley/ Picota with caramelized onions, spinach and fillet
Ingredients:
- Vegetable oil, 2 tablespoon
- Barley, 1 cup
- Onion, 1 yellow
- Spinach, 2 cups
- Beef (fillet, chuck, sirloin or any beef of your choice), 1.5 pounds
- Turmeric, 2 teaspoons
- Beef stock, 3 cups
- Salt, 1 teaspoon
Directions:
- In a medium sized pot add one tablespoon of vegetable oil
- Add one tablespoon of turmeric
- Add the beef stock
- Add salt
- Add the barley
- Let it cook on low to medium heat for about 30-40 minutes
- In a separate pot, cook the meat.
- When the meat is almost cooked, add one tablespoon of vegetable oil.
- Add onion
- Add turmeric
- Add salt
- Add spinach
- When everything is mixed and cooked, combine to the barley.
