Iraqi Salad
Ingredients For Salad:
- Persian Cucumbers (8, Chopped Small)
- Cherry tomatoes (1/2 Cup)
- Pitted Kalamata Olives (1/2 Cup, Chopped in halves)
- Beets (1/2 Cup)
- Chick pees (1/2 Cup)
- Feta Cheese (1/2 Cup)
- Parsley (1/2 Cup, Chopped)
Ingredients For Dressing:
- Sumac (1 Tablespoon)
- Red Wine Vinaigrette (2 Tablespoons)
- Olive Oil (1/2 Cup)
- Lemon Juice (2 Tablespoons)
- Salt and Pepper (1/4 Teaspoon Each)
Directions :
- Chop up cucumbers in any shape you like, preferably small and add to a large bowl.
- Cut cherry tomatoes in halves and add to the bowl.
- Add pitted kalamata olives. You can cut in halves or leave as whole.
- Add beets from a jar. Or you can make fresh.
- Add chickpeas, feta and chopped parsley into the bowl.
- In a separate smaller bowl, make the dressing. Just add everything to the bowl and mix together. Then add the dressing to the salad.
