Barley Soup With Swiss chard and Cauliflower
Ingredients:
- Barley (2 Cups)
- Water (8 Cups)
- Swiss chard (1 Bunch, Chopped)
- Cauliflower (2 Cups Chopped in Florets)
- Chickpeas (1 14oz Can)
- Tomato Sauce (1 14oz Can)
- Cayenne Pepper (1/2 Teaspoon)
- Lemon Juice (1/4 Cup)
- Salt (1 Teaspoon)
Directions:
*Total cooking time 50 minutes.
- In a 10 quart pot, add water.
- When the water boils, add salt then add the barely.
- Cook on medium to low heat for 30 minutes, stirring occasionally.
- Then add the cauliflower and Swiss chard.
- Add chickpeas.
- Add tomato sauce.
- Add cayenne pepper.
- After 10 minutes, add lemon juice and cook for another 10 minutes.
