Barley Soup With Swiss chard and Cauliflower

 

Ingredients:

  • Barley (2 Cups)
  • Water (8 Cups)
  • Swiss chard (1 Bunch, Chopped)
  • Cauliflower (2 Cups Chopped in Florets)
  • Chickpeas (1 14oz Can)
  • Tomato Sauce (1 14oz Can)
  • Cayenne Pepper (1/2 Teaspoon)
  • Lemon Juice (1/4 Cup)
  • Salt (1 Teaspoon)

Directions:

*Total cooking time 50 minutes.

  1. In a 10 quart pot, add water.
  2. When the water boils, add salt then add the barely.
  3. Cook on medium to low heat for 30 minutes, stirring occasionally.
  4. Then add the cauliflower and Swiss chard.
  5. Add chickpeas.
  6. Add tomato sauce.
  7. Add cayenne pepper.
  8. After 10 minutes, add lemon juice and cook for another 10 minutes.
